Lentil Tacos

Ingredients:
1 cup uncooked lentils
2½ cups chicken broth
½ tsp. garlic powder
½ tsp. cumin
⅛ tsp. salt
⅛ tsp. pepper
Tortillas
Toppings of your choice: lettuce, tomato, avocado, cheese, salsa, etc.
 
Directions:
  1. Rinse lentils in water to remove any dust or debris. 
  2. Combine lentils in a saucepan with chicken broth, garlic powder, cumin, salt and pepper.
  3. Bring mixture to a boil then reduce heat to medium-low.  Simmer for 20-25 minutes, stirring occasionally, until lentils are tender.
  4. Assemble tacos by filling with lentils and toppings of your choice. 
Makes: 8 servings
