Fruited Chicken Salad

August means back-to-school and back to a routine.  This might mean packing lunches for school, or getting back into the routine of packing your lunch for work.  Try this Fruited Chicken Salad recipe in your lunch.  Rather than mayonnaise, this recipe calls for non-fat Greek yogurt and fat free cream cheese.  Serve on whole wheat bread or simply eat by itself.

8 oz. fat free cream cheese
10 oz. non-fat plain Greek yogurt
¼ cup fat free raspberry vinaigrette
1 apple, chopped
1 cup halved grapes (red or green)
1 cup celery, diced
3 cups shredded chicken
½ cup sliced almonds
  1. Combine cream cheese and Greek yogurt until well blended.
  2. Add raspberry vinaigrette and mix well.
  3. Finally, add apple, grapes, celery, chicken, and almonds and mix well.Refrigerate until ready to serve.
Makes: 7½ cups
Serving size: 3/4 cup
