Mashed Sweet Potatoes

The fall season brings with it fall vegetables and fruits such as pumpkins, squash, apples and sweet potatoes.  For a twist on your normal mashed potatoes, try making these with sweet potatoes.  Sweet potatoes are a great source of fiber, Vitamin A, Vitamin C and potassium.  If you are feeling adventurous, try adding a peeled apple to the sweet potatoes during boiling. It will add extra sweetness!
3 large sweet potatoes
3/4 cup skim milk, heated
1/8 tsp. pumpkin pie spice
1/8 tsp. pepper
½ Tbsp. soft margarine
1. Peel sweet potatoes and slice into 1/2 inch disks. Boil in water until soft, about 20-25 minutes.
2. Mash with the rest of the ingredients.

Makes: 8 servings
