This versatile salsa is great as an appetizer or as a dressing on chicken.
Ingredients:
2 cups pineapple, diced (about 1 pineapple)
1 cup cilantro, finely chopped
1 avocado, diced
1 jalapeno, seeded and finely chopped
½ red onion, diced
2 Tbsp. lime juice
¼ tsp. salt
¼ tsp. cumin
¼ tsp. pepper
Instructions:
1. Combine all ingredients in a medium bowl.
2. Serve with tortilla chips or over chicken.
