Turkey Zucchini Tacos

1 lb. ground turkey
1 zucchini, diced
2 Tbsp. taco seasoning (recipe below)
½ cup water
Suggested toppings:
Shredded cheese
Plain Greek yogurt
1. Brown turkey in large skillet, breaking up as it cooks. 
2. When no longer pink, add zucchini, taco seasoning and water.  Cover and simmer for 10 minutes.
3. Serve with a hard taco shell or tortilla with toppings of your choice.
Makes: 10 servings

Taco Seasoning

3½ Tbsp. chili powder
½ Tbsp. chipotle chili powder
2 tsp. onion powder
1 tsp. garlic powder
1 tsp. oregano
2 tsp. paprika
2 Tbsp. cumin
4 tsp. coriander
¼ tsp. black pepper
¼ tsp. cayenne pepper
Mix all seasonings together well and store in an airtight container. 
*If you don’t have chipotle chili powder, use an additional ½ Tbsp. regular chili powder instead.
