Trail Mix Energy Bites

Trail Mix Energy Bites

Makes about 20-25 bites.

1 cup puffed rice cereal or old-fashioned oats
½ cup peanut butter
½ cup semisweet chocolate chips
½ cup peanuts
½ cup chopped pretzels
¼ cup wheat germ
⅓ cup honey or agave nectar
⅓ cup raisins or craisins
1 Tbsp. chia seeds (optional)
  1. Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and let chill in the refrigerator for half an hour.  This makes the mixture easier to roll.
  2. Once chilled, roll into 1" balls.  Store in an airtight container and keep refrigerated for up to 1 week.  You may also freeze for up to 3 months.
