Ingredients
⅓ cup canola oil
½ tsp. salt
½ tsp. pepper
½ tsp. dried oregano
4 cups mixed greens
½ cup green lentils, cooked
½ cup red lentils, cooked
¾ cup cucumber, diced
¼ cup olives, drained and sliced
¾ cup Feta cheese
1 cup tomatoes, diced
4 Tbsp. hummus
Directions
- Combine oil, salt, pepper and oregano in a small jar and shake well.
- Divide remaining ingredients in 4 separate bowls.
- Drizzle with 1 Tbsp. dressing and 1 Tbsp. hummus.
