Festive Fruit Salad

4 cups pineapple, cubed (fresh or frozen)
2 cups mango, diced (fresh or frozen)
2 bananas, sliced
1 cup orange sections
1 Tbsp. dried cranberries
2 Tbsp. fresh lime juice
1 Tbsp. dark brown sugar
1 Tbsp. mint, chopped
½ cup shredded unsweetened coconut
  1. Combine pineapple, mango, bananas, orange and cranberries in a large bowl.
  2. Whisk together lime juice, brown sugar and mint.  Pour mixture over the fruit and combine.  Cover and chill for one hour.
  3. Sprinkle fruit with coconut before serving
Makes: 8 servings
