Festive Fruit Salad
Ingredients:
4 cups pineapple, cubed (fresh or frozen)
2 cups mango, diced (fresh or frozen)
2 bananas, sliced
1 cup orange sections
1 Tbsp. dried cranberries
2 Tbsp. fresh lime juice
1 Tbsp. dark brown sugar
1 Tbsp. mint, chopped
½ cup shredded unsweetened coconut
Directions:
- Combine pineapple, mango, bananas, orange and cranberries in a large bowl.
- Whisk together lime juice, brown sugar and mint. Pour mixture over the fruit and combine. Cover and chill for one hour.
- Sprinkle fruit with coconut before serving
Makes: 8 servings
