Grain Bowl

These grain bowls are great to make for dinner on hot summer days or to prepare lunch ahead to take to work.


2 cups brown rice
1 cup kale, chopped
5 Tbsp. balsamic vinaigrette
1 cup avocado, diced
1 cup broccoli, steamed
1 cup cauliflower, steamed
1 cup garbanzo beans, drained and rinsed
2 Tbsp. sunflower seeds
2 Tbsp. dried cranberries


  1. Cook rice according to package directions.
  2. While rice is cooking, chop kale and massage with 1 Tbsp. balsamic vinaigrette until tender. 
  3. When rice is finished cooking, divide among 4 bowls.  Divide remaining ingredients among bowls and top with 1 additional Tbsp. of vinaigrette.
