Pizza Pasta Salad

Try this pasta salad for next tailgate or family gathering.  Substitute your favorite pizza toppings to make your favorite salad.

1 box (16 oz.) uncooked whole grain pasta
4 oz. mozzarella cheese
1 cup tomatoes, diced
1 cup turkey pepperoni, chopped
1 cup green pepper, diced
1 cup black olives, sliced
1 cup red onion, diced
Vinaigrette Ingredients
⅓ cup olive oil
¼ cup white wine vinegar
3 tsp. garlic, minced
½ tsp. oregano
½ tsp. salt
½ tsp. pepper
  1. Cook pasta according to package directions.  Drain and rinse with cold water.
  2. While the pasta is cooking, mix together vinaigrette ingredients.
  3. In a large bowl, combine pasta, mozzarella, tomatoes, pepperoni, green pepper, olives and onion.  Toss with vinaigrette.
  4. Serve immediately or store in refrigerator for up to 3-4 days.
