Maple Walnut Sweet Potatoes

Looking for a quick but healthy side dish?  Try these Maple Walnut Sweet Potatoes!  They have all of the healthy fiber, Vitamins A and C from the sweet potatoes, heart healthy fats from the walnuts, and sweetened with maple syrup.
 

4 lbs. sweet potatoes (8 medium)
¾ cup walnuts, chopped
½ cup dried cherries, chopped
½ cup maple syrup
¼ cup apple juice
¼ tsp. salt
 
Directions:                    
  1. Peel sweet potatoes and cut into ½ inch slices. 
  2. Combine sweet potatoes, ½ cup walnuts, dried cherries, maple syrup, apple juice and salt in slow cooker.
  3. Cook on low 5-6 hours or high 2-3 hours until potatoes are tender.  Sprinkle with remaining walnuts.
Makes: 10 servings
