Turkey Sloppy Joes

National Nutrition Month® is an annual nutrition education and information campaign created by the Academy of Nutrition and Dietetics. The campaign, celebrated each year during the month of March, focuses on the importance of making informed food choices and developing sound eating and physical activity habits.

Rather than trying to completely overhaul the way you eat or adopting a popular diet, let’s go back to the basics in honor of National Nutrition Month.  Let’s simply try to eat more fruits and vegetables.  The dietary guidelines for Americans recommend that adults get at least five one-cup servings of fruits and vegetables each day.  The vast majority of Americans don’t achieve this.

To get more fruits and vegetables into your diet, try one or more of the following tips:
  • Add fruit to your morning cereal or oatmeal.
  • Pack an orange or banana for a mid-morning snack.
  • If you make scrambled eggs for breakfast, add mushrooms, tomatoes or green peppers.
  • Include some spinach or romaine lettuce on your lunch sandwich.
  • Roast a pan of vegetables on Sunday to enjoy for lunches all week.
  • Make a stir fry using the vegetables you already have, or buy a frozen stir fry package.
  • Keep some carrot sticks, grape tomatoes and cucumber slices ready in your refrigerator to eat for a pre-dinner snack.
This Turkey Sloppy Joes recipe is a great way to get more vegetables in your day.  Feel free to change the vegetables in the recipe to fit your tastes.  Carrots and mushrooms would also be a great addition.  Each serving of this recipe has about ¼ cup vegetables.  Every little bit counts when you’re striving for 5 cups of fruits and vegetables each day!
 

 

Turkey Sloppy Joes

1 lb. lean ground turkey
1 small red onion, chopped
½ cup green pepper, chopped
½ cup celery, chopped
1 can (10.75 oz.) condensed tomato soup, undiluted
½ cup ketchup
1 Tbsp. brown sugar
2 Tbsp. prepared mustard
¼ tsp. black pepper
8 hamburger buns
 
Directions:                    
  1. In a large saucepan, cook the turkey, red onion, green pepper and celery over medium heat until turkey is cooked through.
  2. Stir in the tomato soup, ketchup, brown sugar, mustard, and pepper and bring to a boil.
  3. Simmer uncovered for about 10 minutes to allow the flavors to blend, stirring occasionally. Makes: 8 servings
