Hummusalsa

This recipe uses two popular dips – hummus and salsa – and mixes them together!  The first 8 ingredients are a great base for a garlic hummus.  Adding the final 4 ingredients adds a little spice and heat to the hummus.  If you don’t like a lot of heat, seed your jalapeno.  Serve with fresh vegetables or use as a sandwich spread.



Ingredients:
1 can (15.5 oz.) garbanzo beans, drained and rinsed
1 Tbsp. lemon juice
2 tsp. olive oil
½ tsp. salt
¼ tsp. pepper
¼ tsp. paprika
¼ tsp. cumin
1 small garlic clove, minced
½ cup grape tomatoes, halved
1 small jalapeno, seeded and diced
2 Tbsp. cilantro
1 large scallion, chopped
 
Directions:                    
  1. Combine garbanzo beans, lemon juice, olive oil, salt, pepper, paprika, cumin and garlic in a food processor and mix until well blended.
  2. Add grape tomatoes, jalapeno, cilantro and scallion to garbanzo bean mixture in food processor and pulse until ingredients are finely chopped.
  3. Serve with fresh vegetables or crackers. 
Makes: 4 servings
Serving Size: 1/3 cup
