This recipe uses two popular dips – hummus and salsa – and mixes them together! The first 8 ingredients are a great base for a garlic hummus. Adding the final 4 ingredients adds a little spice and heat to the hummus. If you don’t like a lot of heat, seed your jalapeno. Serve with fresh vegetables or use as a sandwich spread.
Ingredients:
1 can (15.5 oz.) garbanzo beans, drained and rinsed
1 Tbsp. lemon juice
2 tsp. olive oil
½ tsp. salt
¼ tsp. pepper
¼ tsp. paprika
¼ tsp. cumin
1 small garlic clove, minced
½ cup grape tomatoes, halved
1 small jalapeno, seeded and diced
2 Tbsp. cilantro
1 large scallion, chopped
Directions:
- Combine garbanzo beans, lemon juice, olive oil, salt, pepper, paprika, cumin and garlic in a food processor and mix until well blended.
- Add grape tomatoes, jalapeno, cilantro and scallion to garbanzo bean mixture in food processor and pulse until ingredients are finely chopped.
- Serve with fresh vegetables or crackers.
