Fresh Market Finds Tomatillo Salsa Taco Recipe

Taco Ingredients:

1 lb. flank steak (may substitute chicken breast or pork loin)
1 jar tomatillo salsa
¼ tsp. salt

Roasted Vegetable Ingredients:

Vegetables of your choice (zucchini, bell peppers, red onion, yellow squash)
Olive oil

Salsa Ingredients:

2 tomatoes, seeded and chopped
½ onion, chopped
1 serrano pepper, seeded and chopped
3 Tbsp. cilantro
1 tsp. garlic powder


  1. Cut flank stank against the grain into strips. 
  2. Saute flank steak inside Instant Pot with salt for 4-5 minutes.  Add tomatillo salsa to the Instant Pot and set to pressure cook for 12 minutes.  Release pressure when finished cooking.
  3. While steak is cooking, cut vegetables into uniform pieces.  (They will shrink during cooking.)
  4. Toss the vegetables in a bowl with a few Tbsp. of olive oil and seasonings of your choice.
  5. Place vegetables on a sheet pan, lined with foil for easy clean-up.
  6. Roast at 375º until tender.  This may take only 15 minutes for some vegetables while others like root vegetables will take longer.
  7. Combine chopped tomatoes, onion, and pepper.
  8. Add cilantro and garlic powder and stir.
